❶ Amuse-Bouche:
Amuse bouche from the kitchen was on a 3 tiered stand⇨"A trio of beets", their inspired dishes.

Oh~I loved my venison dish!
Alcohol made my palate & brain work slowly...did I drink the wine yet?
I really can't tell all of the ingredients that were involved (although they did tell me in detail how they were made). Guess God knows what concoction each of these tiny bites. The flavours were interesting but it wasn't my dish.
❷ Appetizer:
PÂTÉ OF SQUAB & FOIE GRAS with Sicilian Pistachios, Blood Orange, Lillet Gelée.
It was gorgeous, complex, and rich. The foie gras was lighter and simpler in texture and flavor which I like. I was also given 2 pieces of brioche toast to help scarf all of this down. One bite of the green sicilian pistachios w/ foie gras was absolutely good! The lillet gelée was one of the best I ever had. Star Dish!

Kataifi Crusted Sea Scallops with porcini, salsify, pumpkin oil. The Scallops were perfectly cooked with a combination of crispy crunchy and delicate tenderness. The sauce was quite thick but still good. The porcini mushrooms were the most delectable porcini mushrooms I've ever had as well.
One of my favorite dishes. Absolutely delish!
Scallops grilled on the outside, slightly raw inside~Each a different color, shape and taste with a little sauce~ yum!
Wine Pairing: Daniel, Au Bon Climat, Chardonnay, Santa Barbara County 2006.
❸ Entree:
LIBERTY FARM DUCK BREAST with Sweet Potato, Radicchio, Cara Cara Orange.
What a tender piece of duck! The skin was delicous and duck itself was very very succulent. The spring rolls were warm and had a tasty, crispy wrapper! Star Dish!
It would be better if the grapefruit/citrus that put on top may change to Mandarin orange.
Black Sea Bass has delicate, white flesh with a mild flavor. Black Sea Bass wit Syrah Sauce, leek royale, "pommes lyonnaise." at Daniel was classic. Those crisp potato shells were also simply heaven ~ quite tasty to boot.
I could live on black sea bass alone without syrah sauce forever (the Paupiette of Black Sea Bass was perfectly cooked with tremendous texture but the accompanying sauce was overly gelatinous and too peppery.) Tasty nonetheless.
The leek royale and the pommes Lyonnaise were also good. Felt like each bite told a story in my mouth~
I wish I could have more fresh potato chips to bring them home.
Wine Pairing: Daniel « Graves », Bordeaux 2001.
